River weed is collected by wading into cold shallow water, reaching down and gathering the weed from the rocks. The weed is washed with clean water to remove stones, gravel and mud. It is then beaten on a rock and washed again several times before being dried in sheets. River weed is harvested in March and April and processed until June.
