Pickle pork (Som Moo)

Som Moo is a packet food which is popular in Laos. Bring Som Moo for roasting or grilling will gain the the taste or fragrant ( serve with cooked sticky rice)

Ingredients
•  1,5 kg, pork (do not use lean pork)
•  1 kg, pig skin
•  200 g, garlic
•  2 tablespoons, salt
•  1 brunch of cooked sticky rice
•  100 g, Bird pepper
•  Banana leaf with rubber band

Method
1.  Ground the pork, then remove the water
2.  Boiled the pig skin and cut or slice into small pieces, then dry it (make sure that pig skin did not soak or contain the water)
3.  Pound garlic with salt
4.  Cleaning the bird pepper
5.  Dry the banana leaf (not too much dry)
6.  Mix ground pork, pig skin, cooked sticky rice and garlic together. Bruise it to sticky
7.  Make packets by banana leaf (add bird pepper within the packet), leave it for 3-5 days before serving
