Bamboo shoot soup with Ji Naiy (Kaeng Nor Mai) is tradition and delicious menu in Laos. There are many species of bamboo, so you can choose to your favorite species depending on season

Ingredients

  • Yanang Leaf, 1 bunch

  • Boil bamboo shoot, 500 g

  • Short tailed Crickets, 1/2 small bowl

  • Climbing wattle, 8 bud with young leaf

  • Finger grass, 1 small bunch

  • Chilies, 4

  • Salt, 1 tea spoon

  • Soaked sticky rice, 3 table spoons

  • Padeak, 1/2 small bowl

Method

  1. Slice bamboo shoot flor small pieces

  2. Bruise the Yanang leaf wit water (1/3 bowl)

  3. Boil water of Yanang leaf

  4. When the pot was heat, put bamboo shoot, mushroom, pieces of sponge bourd, and pumpkin

  5. Pound soaked sticky rice. Then, put  into the pot

  6. Add Short Tailed Crickets. then, put Padaek after the pot was heat 

  7. Put fresh finger grass and climbing, covered. Ready for serve
